Mongoid 7.2.1, 7.1.7, 7.0.12 released with Rails 6.1 support

These minor releases in 7.2, 7.1 and 7.0 series primarily add Rails 6.1 support.

Although most functionality should work with Rails 6.1, we are aware that the config generator is currently broken with Rails 6.1.

Mongoid 7.2.1 additionally fixes the following issues:

• MONGOID-5033 Cannot use any_of with multiple conditions when using symbol operators on Time fields and passing Date instances
• MONGOID-5035 Query embedded documents by date field with $gt/gte/lt/lte does not find existing documents

Mongoid 7.1.7 additionally fixes the following issue:

• MONGOID-5033 Cannot use any_of with multiple conditions when using symbol operators on Time fields and passing Date instances
